So finally the last piece missing in my kitchen is now on its place!!!! My little pot filler that I bought two summers ago on a antic market is now restored and works like heaven! I chose a new stone sink in granite made in a whole block, boy was it heavy to get in place!!
So when the kitchen is finally done, its just to start baking, right? Tiago was bringing a friend over after school and had requested chocolate cupcakes. He said, “please mum real cup cakes NOT raw food”!
Poor child, he need some sugar I thought and found the cookbook “hello cupcake” by Laila.
Decided to make the “Elvis Presley´s cupcakes”, but I just couldn't´t make them the way it said in the recipe….. Had to change a few things. I always do that, I find a recipe that sounds good then I change into more healthy ingredients and into things I have at home.
Ingredients from the book. Things I changed.
3 eggs 3 organic eggs
21/2 dl sugar 2 dl birch sugar
1 teaspoon vanilla sugar Organic vanilla powder
50 g butter 60 g virgin coco oil
1dl sour cream 1 dl oatly cooking cream
3 1/2 dl wheat flower 3 1/2 dl buckwheat flower
1tsp baking powder 1 tsp baking powder
100g chocolate 100 gr 70% dark chocolate
4tbs cacao 4 tbs raw cacao + 4tsp cacao nibs
2tbs cold coffee 2 tbs cold coffee
3 bananas 3 bananas
2dl salty peanuts 2 dl salty peanuts
And the kids were thrilled, real cupcakes with real sugar, mmmmmmmmm;)
